Cassave Chips



Potato chips? Boring!
Banana chips? Difficult to get them crunchy.

Cassave chips? Yeah baby! These are the real deal my friend (OK - we are not strictly friends as such, but, as the old Jameson advert goes, strangers are just friends we haven't met yet!)

Anyway -  back to the cassave chips.


These snacks are from Suriname and are so simple and so delicious. The other great thing about them is that, compared to the shop-bought cassave chips, they are also relatively cheap. One cassave root is enough to make a whole big bowl of crunchy cassave chips, and should cost you less than 1 Euro. Compare this to the ready made chips which can cost up to 2.50 Euros a packet. Daylight robbery I tell ya!

Ingredients


1 large cassave root
2 cloves garlic
sunflower oil to fry
a sprinkle of salt
a sprinkle of garlic powder


Method


Peel the cassave root and slice into very thin slices using a cheese slicer or wide potato peeler. This may be a little more difficult than it sounds, as the cassave is a pretty tough vegetable.

Peel the garlic cloves and chop into thin slices. Fry these in the sunflower oil until golden brown to infuse the oil. Remove the garlic and discard.

Fry the cassave slices in small batches until they are crisp and golden. Remove and drain on paper towels. Sprinkle generously with salt and garlic powder.
